Meet Molly

A chef first. A dietitian always. A celiac patient for life.

Diagnosed with celiac as a teenager, Molly spent her career proving one thing: safe food can taste extraordinary.

She built and ran a gluten-free bakery that shipped nationwide. Developed recipes and product lines for leading allergen-free brands. Cooked on Food Network and Netflix. Trained as a registered dietitian because she wanted the credibility to back up what she already knew in the kitchen.

Now based in Ortigia, Italy — the historic island district of Siracusa, Sicily — she brings a global lens to gluten-free living, cross-contact safety, and travel. She works privately with a small number of families each quarter. It's the most focused, transformative work of her career.
